To facilitate prep work, a 9 1⁄2-inch-deep polyethylene cutting board spans the length of the unit and is fitted with a side rail. The Cold Bunker system directs refrigerated air across the pan area to help maintain safe temperatures under 41 degrees Fahrenheit.
